In a sauce pan, bring the 4 cups of chicken stock to a boil. Add white pepper, salt, and ginger. Cook for about another minute.
Now in a small bowl mix corn starch with water very well, like a smooth paste. Add corn starch in Chicken stock and stir well. Slowly pour the eggs in a steady stream.
To make shreds, stir the egg rapidly in a clockwise direction for one minute. To make thin streams or ribbons, gently stir the eggs in a clockwise direction until they form.
